1. These are usually made from pork or freshwater fish. Having suffered food poisoning too many times to mention from bad fish, I avoid seafood whenever I am on ‘the wrong side of the mountains.’

2. I call then “Thai hamburgers” because they are ubiquitous and inexpensive.

   The aroma as you peel back the layers of banana leaves is intoxicating!
